Achar: Lemon - Pushpa's orginal recipe modified and refined by Ranjit
Achar: Lemon - Get 5 lemons (or limes)
Note: Double recipe for bigger batch or jar
Achar: Lemon - Cut lemons
Achar: Lemon - Put into Jar
Achar: Lemon - Remember to remove pits!
Note: Squeeze out "some" juice into container if you want a more crispy crunch
Achar: Lemon - Add spices
Add whole spices:
Jiwan (indian oregano) - 1/2 teaspoon
Jeera (cumin) - 1/2 teaspoon
Ginger powder - 1/2 teaspoon
(or chunks of fresh young ginger)
Achar: Lemon - Add 2 tablespoons sugar
Achar: Lemon - Add 1 tablespoon salt (depending on taste)
Achar: Lemon - Add 1 tablespoon vinegar
Achar: Lemon - Agitate Vigorously
Achar: Lemon - Let sit for 2 weeks --> 25 yrs
Note: Add more sugar, salt, and vinegar after a few days --> weeks

Achar - how to make!!!
Achar - cut up gobi, turnips, carrots into bite size pieces
Achar - add turnips & carrots first and cook 5 minutes
Achar - add salt (a good amount)
Achar - add oil - 1/2 cup --> 1 cup
Achar - add ground fenugreek (methi)
Achar - add ground fennel (somph)
Achar- Add tumeric
Achar - mix and cook 5 minutes
Achar - add ground mustard, black pepper, red pepper, and ginger powder
Achar - add gobi (cauliflower) - cook 5 minutes
Achar - Add sugar 1/2 cup --> 1 cup
Achar - add vinegar - 1/2 cup
Achar - cook 5 minutes
Achar - add more sugar & vinegar if needed
Achar - All done! Let sit for two weeks then eat
Pumpkin Prashad - Easy-to-follow Guide
Cook the pumpkin
Scoop out pumpkin flesh or cut in cubes. Discard rind. Cook it until it is mush. Make sure most of the water is evaporated. Cook well - constantly stir to prevent sticking.
Add 1/4 lb of butter; cook well
Set aside in a bowl
Add 1/4 lb of butter and begin to melt
Measure 1 cup of sujee (Semolina)
Add sujee to melted butter
Brown the Sujee until butter comes out of it a bit
Dissolve 1 cup sugar in 1.5 cup of hot water
Add cooked pumpkin to Sujee/Butter mixture
Add water+sugar mixture; mix it all up
Almost done... Add more water if needed
Serve Immediately!
You can spinkle some blanched almonds to make it fancy. :-)
